Below you find the full recipe for Vegan Zucchini Brownies.
140g oat flour (I personally grind jumbo oats into a blender and sieve it into powdery flour)
75g dairy free chocolate chips + 10g more for the top
2 tsp baking powder
1 tsp instant coffee
1 pinch salt
150g maple syrup
200g grated zucchini (squeeze out the water and leave the zucchini on a kitchen paper towel for 5 min)
100g peanut butter (or butter of your choice)
2 tsp vanilla extract
3 tbsp plant based milk
Grease a loaf pan (15 x 20) with vegan butter or oil and preheat oven to 180-190 degrees C. Mix all dry ingredients (except the chocolate chips) in a food processor or simply with a whisk.
Mix all wet ingredients and add to the food processor and blend for 30 sec or mix until the batter is smooth.
Add the chocolate chips and stir with a spoon. Pour the batter into the loaf pan and top with the remaining chocolate chips.
Bake for 35 - 40 minutes. Leave the brownies to cool down before cut for approx. 1h.
