Vegan Zucchini Brownies

Below you find the full recipe for Vegan Zucchini Brownies.


Dry Ingredients:

  • 140g oat flour (I personally grind jumbo oats into a blender and sieve it into powdery flour)

  • 75g dairy free chocolate chips + 10g more for the top

  • 50g organic positivity blend

  • 2 tsp baking powder

  • 1 tsp instant coffee

  • 1 pinch salt

Wet Ingredients:

  • 150g maple syrup

  • 200g grated zucchini (squeeze out the water and leave the zucchini on a kitchen paper towel for 5 min)

  • 100g peanut butter (or butter of your choice)

  • 2 tsp vanilla extract

  • 3 tbsp plant based milk


Grease a loaf pan (15 x 20) with vegan butter or oil and preheat oven to 180-190 degrees C. Mix all dry ingredients (except the chocolate chips) in a food processor or simply with a whisk.

Mix all wet ingredients and add to the food processor and blend for 30 sec or mix until the batter is smooth.

Add the chocolate chips and stir with a spoon. Pour the batter into the loaf pan and top with the remaining chocolate chips.

Bake for 35 - 40 minutes. Leave the brownies to cool down before cut for approx. 1h.

For extra indulgence, enjoy them with plant based custard or oat cream or even sprinkle with organic Sea Buckthorn for a lemony and Vitamin C packed kick
